After a long day of sightseeing, there's nothing better than a hot, comforting bowl of authentic Japanese noodles. We recently stopped by the food court at DiverCity and discovered the ultimate customizable meal: Kitsune Udon.
The History and Flavor of Kitsune Udon
In our latest video, we take a deep dive into this classic dish. Udon noodles are the thickest of all Japanese noodles, known for their satisfying, chewy texture. They are served in a Dashi broth—the core of Japanese savory flavor, made simply from Kombu (kelp) and Bonito flakes.
The star of this specific dish, however, is the topping that gives it its name: Kitsune (which means fox). This refers to a large piece of Aburaage (thinly sliced fried tofu) that has been simmered in a sweet and savory soy-based sauce. Folklore suggests that fried tofu is the fox's favorite food, giving the dish its famous name!
